The first step to making a main course dish like Handi is to marinate your meat. Mutton or goat meat is preferable for cooking Handi as it gives out a strong flavour and taste. It also tastes great when added in gravy along with rice and ghee. For marination, mix spices such as Ginger-garlic paste, Coriander powder, Chat Masala, Turmeric Powder and Pepper Powder in equal quantities. Add little salt to make sure that all of it gets mixed well. Add 1⁄4 cup Yoghurt to it for blending up ingredients well. Make sure that you do not over do on salt as it will be added again later when you add water for cooking Mutton Handi. You can use mutton which has been boiled earlier for making Handi. But if you are using raw mutton then boil it properly before starting preparation of mutton handi.
This way, you will get rid of any bad smell from raw mutton and increase its shelf life too. Keep boiled mutton aside to cool down completely before cutting into small pieces. Cut boiled meat into small pieces so that they cook faster while frying them in oil/ghee at last stage of preparation process. If using fresh mutton then heat some oil/ghee in pan after boiling it properly and fry meat until browned slightly on both sides (do not fry until done). Remove fried Meat from pan and keep aside to cool down completely before cutting into small pieces as described above.
